Barrett Turns 5 With Much Fanfare

It's still a little bit hard to believe that my baby is FIVE years old. We started off the celebration the day before his birthday with a "Special Day" at his preschool, which means that I co-oped that day. His teacher Ms. Carol is an expert at cutting out birthday crowns. The birthday child gets to choose both the color of the crown and color of the glitter. Orange is still Barrett's favorite color. We also got to bring a birthday treat. Barrett decided on sherbet Push-up Pops, which were a big hit with all the kids. It was a big hit with me too because it was a whole lot easier than baking and frosting 2 dozen cupcakes, not to mention the fact that I didn't have to vacuum up cupcake crumbs from off the floor.

The next morning, which was a Saturday, Blythe and I fixed a special Birthday breakfast of Puffed Pancake and Berry Smoothies. Blythe had picked out some Spiderman dishes for Barrett and she set his place with them as an extra surprise.

The next day we a had a family party for Barrett. I asked him what he wanted for dinner and he said, "Pizza and root beer." I picked up a couple of take and bake pizzas for the kids, but made homemade pizzas for the grown-ups. Our numbers were smaller than usual because Jessica was in California visiting Dan and Mia and my parents were driving home from Moab that evening so they arrived in time for dessert. Barrett requested a caramel cake. I ended up making three cakes, when I'd only planned on two. I made a Dulce de Leche cake with caramel frosting from my Mom's Enlightened Cakes cookbook. I wasn't sure everyone would appreciate a lower fat cake, so I decided to make a second cake with canned Dulce de Leche filling and frosted with whipped cream. I tried a from scratch recipe that sounded delicious, but it had too much sugar for our altitude, so it completely fell in the middle. Sadly, there was no way I could use it in a layer cake. So I served that cake with sliced strawberries and whipped cream and made a third cake using a cake mix and a recipe from The Cake Mix Doctor cookbook. They were all really delicious.

Holy smokes, do mine eyes deceive me, or is there really a new post on Jill's blog?

Looks like Barrett had a fun party- I'm sorry I missed it, especially those three cakes!
